No egg left to get on your face? Baking is still an option.

Thanks to ”avian flu”, chickens are flying the coop. You’re trying to bake, but without eggs things are looking dire. This is where vegans laugh knowingly… because they’ve been baking with alternative ingredients all along.

One of the most wholesome binding agents is simple flax seeds.

You’ll need 1 Tbsp ground raw flaxseed per 2 1/2 Tbsp water. Mix them together and let it sit for a few minutes. The flaxseed will grow mucilaginous in texture.

Whole flaxseed stays fresh longer. I highly recommend getting whole seeds and only grinding as much as you need, either with a dedicated coffee grinder or a little hand spice grinder. Once ground, it goes rancid fairly quickly.

(You can also sprinkle ground flax in porridge, or use whole seeds to grow microgreens.)
